Don’t be afraid of discounted goods - Supermarkets will heavily discount things that don’t sell and won’t stay fresh, even though there is some good life left in them, they just want them off the shelves. Don’t be afraid to go to the supermarket in the evening and roam the bakery aisle looking for people discounting the baked goods. You can get loaves of bread for next to nothing, or bagels for your breakfast the next day.

You can get discounted fruit and veg as well don’t forget, but you need to be more careful with this, so have a look through and pick out the items in the best condition. You can pick up some really healthy foods this way at bargain prices.

Buy straight from the farmer - Are there any farmers markets near you? Have a check and see. Or what about farms? Some farms have their own little shops right on site, and as the fruit and veg hasn’t been sold to the big supermarkets to be frozen and transported around, then often it is a lot cheaper and healthier than the stuff you’ll find in the supermarkets. If you are a regular customer you can even ask them to deliver you a box of fresh veg every week to save you having to go out of your way.

As you can see then there are lots of ways for you to get healthy and tasty food, without having to pay for the privilege. Don’t try and jump in and do all these at once or you’ll burn yourself out and give up, instead start to add in one method every few months, and in a years time you’ll look back and wonder why you didn’t make the change sooner!

Bread Maker Machines – The Two Forgotten Ingredients

I love my bread machine, it make the bread, with less than half of working time using traditional methods. There are some things they have left out of the recipe booklet, though. The moisture content of flour can vary depending on the age & the environment, and no matter how strictly you follow the recipe, sometimes the bread doesn’t come out to perfection. There are two components, we can help to turn the bread out better.

wheat gluten protein: Not all of the flours have the same protein content. Bread flour has higher protein content than all-purpose flour and cake flour has even less. Bread flour cost more then all-purpose flour, but all-purpose flour works well for the production of bread, if you add gluten. Instead of buying different types of flour for every little thing they do, why not buy all-purpose flour and wheat gluten when making bread. It isn’t expensive and you only used very little, about two teaspoons per bread, so that it will last for some time.

When adding wheat gluten to the bread maker machine i get the best result when i add it with the flour. The manufacturer recommends adding the water first before the flour. So once the flour is add i add wheat gluten this is so that the gluten can react with the flour and not before.

The second secret ingredient is dough conditioner. The different commercial dough conditioners contain different ingredients, which are commonly a combination of wheat gluten, yeast and other chemicals such as ammonium chloride, DATEM (an emulsifier),ascorbic acid (vitamin C), different calcium salts and sometimes soy.

There is a widespread problem with the machines of bread, pans is that they have a vertical lighter crumb over a loaf of bread, more dense and the crumbs on the bottom of the pan.
Dough air conditioners are used to solve this problem by improving the texture and stable growth, leading to a more consistent crumb.

As in the case of wheat gluten, you do not have much. In fact, very few. For 1 1 / 2 pound of bread, I think it is only a teaspoon 1 / 4 of dough softeners enough to give me good results.
