From mild-mannered educational shows such as Great Chefs with world renowned chefs teaching their secrets, to fiery Chef Ramsey yelling at yet another restaurateur on Kitchen Nightmares, it seems the chef runs the gamut in both intensity and style. Still, what is a chef and what would you be doing as one? There is a lot more than just cooking to this culinary arts career.

A chef leads and provides guidance for the whole kitchen. Everyone in the staff looks up to the chef for orders, advice, and protocol. In turn, the chef takes care of many decisions from who is hired or fired, to even small things such as which garnishes should be used on what dishes. Your efforts are what make the kitchen great.

Being a chef is tough. You need to be able to spot problems as the arise and be able to fix them quickly. You also need a vision of what you want your kitchen to be, enough knowledge to be able to plan it, and the backbone to be able to stick to your guns no matter what may go wrong.

Good chefs need good staff. This means that all recruitment and training should be carefully supervised. If someone does not know how to do something, as the chef, it’s your job to teach them. If someone refuses to work well with the teal or is too bossy and disrupting the kitchen, it is your job to set them straight or to fire them.

Once you have good staff members, you will also need to keep your staff sharp. All food quality will need to be monitored by you. If the tarts are doughy or the fish is underdone, you must find out quickly and make sure it is fixed before the food is sent to the customer. Sloppy work being sent to the customer regularly means you are not doing your job.

A good chef is more than someone who barks orders, however! Everyone in the kitchen is there because they have a passion for food. You will need to help fire this passion by enriching your staff with new ideas, new ingredients, and little adventures to help give them more ideas. Not everything you try out will become part of the menu or even go out to the customer, but the little experiments and exchange of new ideas between staff members will help keep your kitchen going strong.

Being a chef is not for everyone. It is a hard, hot job full of pressure that will test your limits. However, if you think you have that it takes to make it and become a great chef, education will help you get your foot in the door so you can work your way up to become a real chef.
